Meet Prairie Mill Bread Co.

Prairie Mills Bread Co. is a bakery of exceptional quality. Having been in business for roughly 16 years, they've truly mastered the craft of bread baking.

A few things set Prairie Mill Bread Co. apart from the rest. They purchase their grain directly from farmers and mill it themselves on location, making for mighty fresh flour.

John, who has owned the bakery with his wife Karen for more than a decade now, describes them as not only bakers but agri-processors, providing a field-to-table, valueadded product. They use the highest of quality ingredients- organic flour, seeds, fruit, grains, and honey in the place of sugar. Never are oils, shortening, or preservatives added. They truly believe in their product and consider educating consumers about what they do and why an important part of their mission.

The business has grown considerably over the past 9-10 years. John and Karen consider themselves fortunate to have been a bit ahead of the whole grain, organic curve that swept the bread world relatively recently. They were ready and waiting by the time big businesses caught on to the trend and began promoting what they were already providing. Timing has been on their side, and by now John feels as though they've developed something of a reputation around these parts, which he knows is important when you're operating a small business. About their bakery, he can feel the story, or folklore, that often exists around long-standing specialty businesses such as theirs beginning to gain a life force.

They offer a wide variety of breads, including spelt, cinnamon raisin, nine grain (John's personal favourite), corn millet, sprouted grain, and sourdough made with their very own culture, started at the bakery's inception from fermented grapes- not a claim many bakeries can make these days. In addition to these staples, they also offer exciting daily features such as Jalapeño Cheddar and Cranberry Orange.

Prairie Mill Bread co. vends at the HSCA indoor and outdoor Farmers' Market. Catch them there, visit them at their bakery on Northland Drive, or find their loaves at many of Calgary's natural food stores. They've also recently opened a sister bakery in the Northwest of Edmonton!
